Gazpacho from cucumbers and avocado with basil

 

Ingredients  (на 4 portions):

3 medium sized fresh cucumber

2 ripe, soft avocados

sprig of basil

250 ml vegetable or chicken broth or water

100 ml cream 20-35% fat

salt to taste

2 cloves of garlic

small sprig of mint (optional)

juice of one lime or ½ - 1 lemon (to taste)

zest of one lime or half a lemon

2-3 green onions (whole)

Preparation:

1. Cut the cucumber lengthwise and release them from seed (with a spoon). If the skin is quite rough, then cut it off . Cut into large slices randomly.

2.Peel avocado  and coarsely chop well.

3. Mix all the ingredients and grind in a blender, gradually adding the cream to the desired consistency. Add salt and lime juice / lemon juice to taste.

4. Chill the soup in the refrigerator (at least 30-40 minutes).5. Serve with slices of cucumber and a sprig of basil.
