Holodnik

Ingredients:

Boiled beets - 5p (0.9-1kg);

Water - 1.7-2 liters;

Kefir - 0.8-1 liters;

Onions (either green) - 3 units (300g);

Fresh cucumber - 4 pieces (500g);

Salt - approximately 1 table spoon+ 1 teaspoon;

Sugar - 2-3 teaspoons;

Fennel - 1 bunch;

Sour cream - optional;

Boiled eggs - at will;

                                                                                             Pan for 5 liters.

 

Preparation:

The first step is to boil beets.

Then,  boil the water and  cool it. The cooled-down water we mix with kefir in a big pan (not less than 5 liters). it Is possible to use any Kefir  - your favourite. Originally we mix 1,7 liters of water with 0,8 liters of kefir, and at the very end of preparation of a holodnik, we add the remained kefir and water, if necessary.

We clean and grate the cooked beet. It can be rubbed on a usual grater, or  cut thin stripes. We add beet in a pan with kefir and water. Then, we salt and add sugar. It's all up to your taste, try, the holodnik has to be moderately sweet and salty. My mother adds about 2-3 teaspoons of sugar both 1 tablespoon and 1 teaspoon of salt. But it is all depends on sweetness of beet, kefir and your taste.

Finely chop the onion. You can replace the usual onions with green. But I like it better with the ordinary bulb. Add to holodnik.

Then we cut fresh cucumbers on small slices. If the peel is rigid, it is better to cut off it. Add cucumbers in a holodnik.

Add the cut fennel.

Make sure that everything is well mixed. If necessary add water, kefir, salt and sugar. I like to add a little water that soup was more liquid.

Send in the refrigerator to cool. Serve with sour cream and half a boiled egg.
